Lefse is a staple of Norwegian cuisine. These delicious roll-ups are bite-sized treats, perfect for starting a Christmas meal.
Ingredients:
- 6 slices of lammerull(lamb cold cuts)
- Approximately 4 Tbsp. beet salad
- 2 lefse rounds
Directions:
- Spread beet salad on the lefse and top with slices of lammerull.
- Roll the lefse up tightly and place them on a platter with the flap facing down.
- Slice off the ends and divide each rollup into two or three slices at an angle.
- Garnish with some sprouts or other greens, and serve!
Tip: Feel free to use toothpicks to hold the rollups together.
Beet Salad
Ingredients:
- 1 jar of pickled beets
- 2 pieces green apple
- 1 shallot
- 3 Tbsp. mayonnaise
- 3 Tbsp. heavy cream
- 1 tsp. caraway
- 5 tsp. salt
- 1 tsp. sugar
Directions:
- Drain the beet juice. Cut the beets, apple and onion into small cubes and place in a bowl.
- Mix the mayonnaise and cream, and fold this into the beet mixture. Add caraway and season with salt and sugar.
