Kebab is a cooked meat dish, with its origins in Persian and Middle Eastern cuisines. Many variants are popular around the world. 

Kebabs consist of cut up or ground meat, sometimes with vegetables, and various other accompaniments according to the specific recipe. Although kebabs are typically cooked on a skewer over a fire, some kebab dishes are baked in a pan in an oven or prepared as a stew such as tas kebab. The traditional meat for kebabs is most often mutton or lamb, but regional recipes may include beef, goat, chicken, and fish.

Enjoy this Norway-style kebab, a popular fast-food meal found all over Norway.

Ingredients: 
1.1 lb (500 grams) boneless chicken
1/2 tomato
1 small red onion
Red and green bell peppers
fresh cilantro, chopped
1/2 Tbsp. baking powder
1/2 Tbsp. salt
1/2 Tbsp. lemon juice
1/2 Tbsp. chili powder
1/2 Tbsp. black pepper

lettuce
tomato slices
cooked rice or
pita bread, sliced in half

How to make: 
Chop chicken into very small pieces. Cut tomato into slices. Dice red onion. Cut bell peppers into dice. Chop cilantro finely. 

Place chicken in a mixing bowl and add baking powder, salt, lemon juice and black pepper. Add tomatoes, onion, bell peppers and mix everything well. Heat up a large frying pan and add 1 Tbsp. of canola or olive oil, and sauté mixture for 5-7 minutes until meat is golden in color.

Serve over rice or in pita bread. Garnish with tomato slices and crisp lettuce, then drizzle with kebab dressing.

Kebab Dressing
1 1/2 cups (350 grams) Greek yogurt
2/3 cup (150 grams) real mayonnaise
2/3 cup ketchup 
2 Tbsp. pickle juice
4 cloves garlic, crushed
4 tsp. salt 
2 tsp. black pepper 
3 tsp. cayenne pepper 
4 tsp. ground coriander 
2 tsp. cumin
2 tsp. garam masala
