This Norwegian cardamom-almond tart’s name translates to ‘Prince’s Cake’ in English. It’s a classic dessert to enjoy with coffee on a cold winter’s day!

Ingredients:
For the pastry:
200 g / 7 oz. plain, all-purpose flour
100g / 3.5 oz. butter
50 g /2 oz. icing or powdered sugar
1 egg

For the filling:
130 g / 4.5 oz. ground almonds
120 g / 4 oz. sugar
15 g / 1 oz. butter
1 egg
1 Tbsp. milk
1/2 tsp. rum essence
1 tsp. ground cinnamon or ground cardamom

Method
Sift the flour and icing sugar into a bowl or into the bowl of your food processer and rub in the butter. Gradually add the egg to make a light soft dough. Gently knead it into a ball, cover and refrigerate for a couple of hours.

Preheat the oven to 170° C/ 340° F. Place a baking sheet in the oven to heat up. This will help your tart to get a nice crisp base when you bake it.

To make the filling, put the almonds and sugar into a food processor and blend together until you have a fine mix. Blend in the butter and gradually add the egg, milk and rum essence.

Take two thirds of the dough and roll it out. Line a fluted 20 cm flan tin with the dough, taking care to carefully push it into the edges. Leave the overhang. Spread the filling mixture evenly inside the pastry base and dust with the cinnamon or cardamom. With the remaining dough roll it out and cut into strips and decorate the top of the tart in a lattice pattern. If you are feeling imaginative you can cut shapes instead. Trim off the excess pastry from the edge of the tart tin and paint the pastry with beaten egg.

Put the tart tin straight onto the pre-heated baking sheet that you’ve already put in the oven. Bake for about 20 minutes until crisp and golden brown. Cool for around 30 minutes in the tin before removing.
