Matpakke Wraps

This simple, healthy wrap is a take on the traditional Norwegian matpakke. Matpakke is a lunch you take to school or work and most commonly includes an open-faced sandwich wrapped in parchment paper. This wrap is a great option for children to make as they head back to school or a tasty snack for a fall hike.

Ingredients:

  • 1 whole grain tortilla
  • 125 g cream cheese
  • 3 full-sized carrots
  • ½ a cucumber

Preparation:

  1. Cut the carrots and cucumbers into long strips.
  2. Spread the cream cheese over half of the tortilla (this will make it easier to roll up)
  3. Spread the carrot and cucumber over the cheese and roll together.
  4. Roll into parchment paper and divide into three.
