A classic dessert according to a recipe from Olden.

Makes 4 servings

Ingredients:
150 g prunes (5.3 oz.)
8 dl water (3 1/3 cups or 27 oz)
1 dl sugar (6-7 Tbsp.)
2 1⁄2 Tbsp. potato flour (or substitute with corn starch)
1⁄4 dl water (1 ¾ Tbsp.)

How to make:
Soak the prunes in 8 dl (5.3 oz) of cold water overnight.

The next day, boil the prunes and water, adding the sugar. Stir together potato flour (or corn starch) and pour 1/4 dl of water into the porridge in a thin stream. Stir well and bring to a quick boil. Sweeten to taste with sugar. Sprinkle some sugar on top (to avoid a skin forming), and allow to cool.

Served with a splash of buttermilk (or substitute with half and half or cream)

“Here in Olden in Nordfjord, sosakjøt [local dish of cubed beef in dark brown sauce] and prune compote have been traditional wedding/party food. It is still used to this day.”
