Invite your Viking kids into the kitchen! This 5-ingredient cookie is one that is easy and fun for young bakers too. The buttery cookies are rolled, pressed with a fork and given a crunchy sugar topping everyone will enjoy. Vær så god!

Cookie ingredients

5 cups flour
1 2/3 cups sugar
2 cups butter, slightly chilled or at room temperature
1 egg

For the topping

1/4 cup nib sugar or pearl sugar*
2 Tbsp. butter, melted

Cream butter and sugar, add egg and then add flour. Mix to make a smooth dough. Roll the dough into small balls, using 1 Tbsp. or less of dough per cookie. Place on a parchment-lined cookie sheet. Press each dough ball once with a fork, making a clear line pattern. Brush each cookie lightly with the melted butter, then sprinkle on sugar topping. Bake at 350 degrees F on center oven rack for 10-12 minutes. This recipe makes about 80 cookies. Recipe adapted from

*While sugar nibs are used in European baking, you can also use pearl sugar or make your own crunchy sugar bits with crushed sugar cubes. Place about 10-20 cubes in a heavy plastic bag and use a meat mallet or rolling pin to tap the cubes into smaller pieces.
