Mini-Burgers with Bacon Marmalade

Ingredients

For the Burgers

1 lb. ground beef
1 lb. ground pork
2-3 Tbsp. strong mustard
1 Tbsp. horseradish
salt and pepper to taste

For the Marmalade

1/2 lb. bacon, finely chopped
2 red onions, thinly sliced
3 Tbsp. apple sauce
2 Tbsp. brown sugar
1 Tbsp. garlic, finely chopped
1 Tbsp. strong mustard
1 Tbsp. red wine vinegar

For the Sauce

1/2 cup mayonnaise
1/4 cup sour cream
1/2 lb. solglad cheese or another red washed rind cheese
3 Tbsp. lemon Juice
3 Tbsp. dill, finely chopped
salt and pepper to taste

To Serve

2 apples, thinly sliced
4 pickles, thinly sliced
tomato ketchup
mustard
romaine lettuce
10 small hamburger buns

Directions

For the Marmalade

In a frying pan over medium heat, fry the bacon until slightly crispy. Set the bacon aside on a small plate lined with a paper towel. Reduce heat to low. With the bacon fat still in the pan, add the red onions and cook gently until they become soft and translucent. Add the remaining ingredients and bacon, simmering for 5-10 until slightly reduced and ready to serve.

For the Sauce

Put all of the sauce ingredients in a medium bowl and mix with a hand mixer until smooth and well mixed.

For the Burgers

In a large bowl combine all of the burger ingredients and mix to combine well. Divide the mixture into 10 equal portions, press into disks and cook to your preferred doneness. Serve with the fixings listed above.
